2 large sweet potatoes, 1 tbsp olive oil, salt |

1 carrot (cubed), ½ red onion, handful Brussels sprouts (halved), 1 tbsp oil, salt |

Glaze |
2 tbsp BBQ sauce or spiced glaze |

Finish |
Fresh thyme, black pepper |

Roast sweet potatoes whole or cubed at 200°C until soft (20–25 mins), mash with oil + salt until smooth |

Roast carrots, onion, Brussels sprouts with oil + salt until caramelised (20 mins) |

Cook SHICKEN Tikka Kebabs in pan until charred and heated through (5–6 mins) |

Warm BBQ/glaze slightly |

Plate: spread mash, top with roast veg + tikka pieces |
