How did our Tikka Kebabs get invented?
It started when our kids were little. We used to make these kebabs for outings, football training days and the sort of family plans.
The kebabs were fun, easy to share and quick to pack into a box. Before long, they made their way from our family kitchen into lots of other family kitchens too. They became one of our signature dishes, now sold in Costco and other retailers across the UK, Sweden, Iceland and the USA.
We make our Tikka Kebabs by marinating SHICKEN pieces in smooth vegan yoghurt, then adding a rich blend of ground spices: garlic, ginger, paprika, turmeric, fenugreek leaves, black cardamom, cumin seeds, coriander seeds and tamarind. The pieces stay in the marinade for 24 hours, giving them that gorgeous deep tikka red. In fact, look around and you may notice the red in our logo background and aprons is very much tikka red (not a coincidence, your honour).
Not hot or mild (sounds ambivalent, doesn't it? the flavour sits in that lovely tikka area (not a grey area, a tikka area)). Gently spiced, balanced and full of Tikka flavour inside out, with subtle heat coming through from the ginger, garlic and spices. The pieces work beautifully on a skewer, but they are also very happy in a naan, on a salad, with chips, in a curry, on a platter or wherever dinner politics takes them.
They are easy to cook too, shallow fry, oven, BBQ or air fryer (ready around 15 mins). Useful when your relatives’ kids ask what is for dinner, or when friends announce a “dinner party visit” with the generous notice period of one hour. Plenty of time to panic, and apparently still plenty of time for them to use every glass in the house (plus the mugs, somehow, and left plenty of dishes to wash).
And what does “tikka” mean?
The word is commonly linked to “piece” or “chunk”, which makes sense. Tikka is about marinated pieces, usually cooked with spices and a yoghurt-style marinade, often over heat in a Tandoor (see below) until the outside catches colour and the flavour settles in.

One interesting thing: tikka has become very familiar in the UK over the past few decades, from curry houses and supermarket meals to sandwich fillings and family dinners. Some people may even remember tikka as a British Rail sandwich favourite in the 1990s. A small piece of food history, tucked into lunch (literally, in that case).

FROM FROZEN:
Preheat oven to 200°C/ Fan 180°C, Gas 6. Remove all packaging. Place kebabs on a baking tray in the centre of the oven. Cook for 20 minutes, turning halfway through cooking.
FROM CHILLED:
Preheat oven to 200°C/ Fan 180°C, Gas 6. Remove all packaging. Place kebabs on a baking tray in the centre of the oven. Cook for 15 minutes, turning halfway through cooking.
Check food is piping hot. Do not reheat once cooled. All Cooking appliances vary. This is a guide only.
Kebabs can also be cooked in an Air-Fryer or on a BBQ, please ensure centre of the kebab reaches minimum of 70 °C for 2 minutes.
