Tikka Masala. You might wonder, what actually is it?
Extremely popular in Britain, Tikka Masala was even declared as a “true British national dish” by a government minister in 2001. Nobody truly knows where the famous dish originated. Some say it came from 5-star hotels in Mumbai and Delhi, while others argue its roots lie in the famous curry houses of Birmingham and Glasgow in the 1970s.
For the Glasgow version, one popular legend says a customer once found his chicken tikka a tad dry (which, in Scotland, is practically an invitation for gravy). So the restaurateur added a spiced tomato-cream sauce, possibly starting with a tin of tomato soup. The customer liked it, told his friends, and the saucy version started making its way around town.
Debate aside, we all love a good dish, and the stories around it do enhance the flavour in a way.
For SHICKEN Tikka Masala, we craft it our own way. In one pot, you will find bell pepper, garlic, ginger, salt, paprika, turmeric, fenugreek leaves, black cardamom, cumin seeds, coriander seeds, tamarind and coriander leaves. After more than 14,400 seconds of marination (4+ hours, in case you were wondering), the sauce and pieces are slowly simmered together, until a warming classic is ready.
