Seekh kebabs are quite the celebrity. Food & Wine describes them as central to “desi barbecue”, often served alongside tikka and tandoori. For us, we make them plant-based, with a touch of family preference. And worry not, we are not loading them with chillies. They have a subtle heat and a succulent texture.
We are always generous with our spices, coriander leaves and seeds, mint leaves, garlic, ginger, green chillies, paprika, turmeric and cumin seeds. A wonderful blend right there. Perhaps it is hard to imagine how all that tastes when you are reading it like Shakespeare, but give it a chance. Your taste buds might fall in love with Seekh (then marry, have two kids, maybe a dog, depending on family politics).
Next time you wonder what to add to your lunchbox or dinner platter, this is the one to reach for. With a dash of lemon juice, a sprinkle of coriander, and perhaps some green chutney.
