Who’s Josh? Who’s Rogan? Well, that is the dish name. It does sound like a person’s name, we know.
There is an answer to the riddle. With origins traced back to around the 16th century, “rogan” is often linked to oil or ghee in Persian, and sometimes to “red” in Hindi, while “josh” can refer to heat, passion, boiling, stewing or braising. So Rogan Josh is usually understood as a red-looking dish with an oil-based sauce.
An interesting lunch-table fact, the red colour looks like it must be all chilli, but traditionally, that is not quite the point. In Kashmiri cooking, the colour often comes from Kashmiri chillies and ingredients such as alkanet root, giving the dish its deep red look without making it a competition in pain. So when someone says, “that looks hot”, you can say, actually, this one is more about aroma, colour and slow cooking (then watch them decide whether to believe you).

In the UK, rather than using traditional alkanet, restaurants often use tomato to create that classic Rogan Josh red. For us at SHICKEN Kitchen, we use tomato paste, fresh tomato, onion, garlic, ginger, green chilli, red lentil, turmeric powder, coriander powder, cumin powder, fennel powder and black pepper.
