Jalfrezi Curry 350g | SHICKEN
Jalfrezi. Can you taste the word? What flavour is it? (Maybe quite self-evident, if you have had it before.)
Also written as jhal frezi, the word is often linked to jhal or jhāl, meaning hot or spicy, and frezi, which points to frying or stir-frying. So Jalfrezi roughly means a hot stir-fried curry (the name did try to warn you).
Its story is usually traced back to the 19th century, when it was used as a clever way to bring cooked dishes back to life with onions, chillies and spices. Some stories also link the stir-fry style to Chinese workers who came to Assam tea plantations in the 1830s, which gives the dish another little twist in the pan.
It became one of the favourites in British Indian restaurants and takeaways, known for peppers, onions, tomatoes and green chillies. It was once even reported as the UK’s favourite Indian restaurant dish back in 2011 (yes, Tikka Masala, I think it may need a quiet minute).
When travelling around India and visiting some of the 5-star hotels for inspiration, we noticed that Jalfrezi was a versatile curry, so we adapted the idea too. For our SHICKEN Jalfrezi, we make it peppery and tomato-led. Into the pot go tomato, bell pepper, garlic, ginger, chillies, onion, turmeric, chilli powder, coriander leaf, red lentil, coriander, cinnamon, black pepper, pimento, cardamom, clove, bay leaf, cassia, nutmeg, cumin and fenugreek leaves.
Finally, infusing the curry with our SHICKEN pieces makes our Jalfrezi an almost too-perfect plant-based version. Your guests may not realise this Jalfrezi contains no meat, fish, egg, paneer or dairy at all, and is 100% plant-based.
