You have probably met this legendary dish before. Its story is often traced back to mid-20th-century Delhi, and the idea was brilliantly practical: leftover tandoori chicken, cooked over coal fire or in a tandoor, was given a second life in a buttery tomato gravy (a long story, yes, but that is the short and saucy version).
Its original name, murgh makhani, tells you a lot (let me open google translate). Murgh means chicken (now, in our case, SHICKEN, natural, satisfying plant protein), while makhani means buttery or butter-based, referring to that smooth tomato, butter and cream-style gravy.
