Before long, they made their way from our family kitchen into lots of other family kitchens too. They became one of our \u003cspan style=\"color: rgb(255, 200, 0);\"\u003esignature\u003c\/span\u003e dishes, now sold in \u003cspan style=\"color: rgb(255, 200, 0);\"\u003eCostco\u003c\/span\u003e and other retailers across the UK, Sweden, Iceland and the USA.\u003c\/p\u003e\n\u003cp\u003eWe make our Tikka Kebabs by marinating SHICKEN pieces in \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e\u003cstrong\u003esmooth vegan yoghurt\u003c\/strong\u003e\u003c\/span\u003e, then adding a rich blend of ground spices: \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e\u003cstrong\u003egarlic, ginger, paprika, turmeric, fenugreek leaves, black cardamom, cumin seeds, coriander seeds and tamarind\u003c\/strong\u003e\u003c\/span\u003e. The pieces stay in the marinade for \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e\u003cstrong\u003e24 hours\u003c\/strong\u003e\u003c\/span\u003e, giving them that \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e\u003cstrong\u003egorgeous deep tikka red\u003c\/strong\u003e.\u003c\/span\u003e In fact, look around and you may notice the red in our logo background and aprons is very much tikka red (not a coincidence, your honour).\u003c\/p\u003e\n\u003cp\u003eNot hot or mild (sounds ambivalent, doesn't it? the flavour sits in that lovely tikka area (not a grey area, a tikka area)). \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e\u003cstrong\u003eGently spiced, balanced and full of Tikka flavour\u003c\/strong\u003e\u003c\/span\u003e inside out, with subtle heat coming through from the ginger, garlic and spices. The pieces work beautifully on a skewer, but they are also very happy in a naan, on a salad, with chips, in a curry, on a platter or wherever dinner politics takes them.\u003c\/p\u003e\n\u003cp\u003eThey are \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e\u003cstrong\u003eeasy to cook\u003c\/strong\u003e\u003c\/span\u003e too, shallow fry, oven, BBQ or air fryer (ready around 15 mins). Useful when your \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e\u003cstrong\u003erelatives’ kids\u003c\/strong\u003e\u003c\/span\u003e ask what is for dinner, or when \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e\u003cstrong\u003efriends announce a “dinner party visit”\u003c\/strong\u003e\u003c\/span\u003e with the generous notice period of one hour. Plenty of time to panic, and apparently still plenty of time for them to use every glass in the house (plus the mugs, somehow, and left plenty of dishes to wash).\u003c\/p\u003e\n\u003cp\u003eAnd what does “tikka” mean?\u003c\/p\u003e\n\u003cp\u003eThe word is commonly linked to “piece” or “chunk”, which makes sense. Tikka is about marinated pieces, usually cooked with spices and a yoghurt-style marinade, often over heat in a Tandoor (see below) until the outside catches colour and the flavour settles in.\u003c\/p\u003e\n\u003cp\u003e\u003cimg alt=\"\" src=\"https:\/\/cdn.shopify.com\/s\/files\/1\/0560\/1214\/4829\/files\/SF_W_26_SKU_Descri_Story_TIKKA_TANDOOR.jpg?v=1781099901\"\u003e\u003c\/p\u003e\n\u003cp\u003eOne interesting thing: tikka has become very familiar in the UK over the past few decades, from curry houses and supermarket meals to sandwich fillings and family dinners. Some people may even remember tikka as a British Rail sandwich favourite in the 1990s. Who’s Rogan? With origins traced back to around the 16th century, “rogan” is often linked to oil or ghee in Persian, and sometimes to \u003cspan style=\"color: rgb(255, 200, 0);\"\u003e“red”\u003c\/span\u003e in Hindi, while “josh” can refer to heat, \u003cspan style=\"color: rgb(255, 200, 0);\"\u003epassion\u003c\/span\u003e, boiling, stewing or braising. So Rogan Josh is usually understood as a red-looking dish with an oil-based sauce.\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"color: rgb(255, 200, 0);\"\u003eAn interesting lunch-table fact\u003c\/span\u003e, the red colour looks like it must be all chilli, but traditionally, that is not quite the point. In Kashmiri cooking, the colour often comes from Kashmiri chillies and ingredients such as \u003cspan style=\"color: rgb(255, 200, 0);\"\u003ealkanet\u003c\/span\u003e root, giving the dish its deep red look without making it a competition in pain.
